InnerFit Protein Pancakes


I am in love with these pancakes. Have not used flour/batter in 8 years. Utilize a great brand of rolled oats for this easy recipe. Let me know your variations.

Ingredients:
1/2 cup old-fashioned oatmeal (prefer organic from the bin)
1/4 cup low-fat cottage cheese (or tofu)
4 egg whites
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
optional blend in 1/2 to whole banana
optional fold in fresh or frozen blueberries

Directions

Process the oatmeal, cottage cheese, egg whites, vanilla extract, cinnamon, and nutmeg in a blender until smooth (Wet and thicken it up the way you enjoy regular pancake batter. If batter is too thick (rarely happens) add some water.
Spray a nonstick skillet with cooking spray (Prefer Smart Balance -gluten free. Add the batter and cook over medium heat until both sides are lightly browned.
