Summer Salad Meal - Heal your body with beautiful salads - Healthy eating!!!



My summer salad recommendations are here!  Just think, with a little preparation you and your family can enjoy a bounty of fresh food full of rich nutrients to give your energy a boost and fill your palate with delicious flavors.  Shop your local market today and take this list of ingredients and combine them with my suggested light rice vinaigrette dressing for an amazing meal.

Visual appeal?  Yes, this is a beautiful salad with a variety a colors, textures, and flavors.  Whether you and your partner are sharing or you are creating a salad for a group, you will satisfy all by combining these delectable ingredients.  Please feel free to vary on your needs as tofu may be substituted for the meat.  You may use vegan cheese as well.  Please comment and let me know your results of this recipe, please ask questions, I want to help you!


Here are the ingredients:

1 head  romaine lettuce, washed, dried & chopped

1 cup raw chickpeas soaked overnight (live food highly perishable) may sub can
1 - 2 roasted beets, diced  - prefer red, many varieties at Whole foods
1 cucumber,  gently peeled & diced
1 red pepper, diced
2 med carrots, shredded
1 8 oz. package low fat mozzarella - flat package (brands vary) cubed
5-6 slices kosher salami, diced
2 stalks celery, diced  (recommend organic the taste is far better)
1/2 head red cabbage, shredded (you may buy it pre-packaged)
2-3 green onions  diced
fresh dill gently shredded by you:)

Vinaigrette dressing - my favorite go to please feel free to vary:
3 T white rice vinegar
1/2 t honey or agave syrup
1 t dijon mustard
1 large or 2 small cloves garlic  minced
3 T  extra virgin olive oil  (shop and INVEST in a good brand, flavors vary it's worth the price)
Pink Himalayan Sea Salt - lightly cover (Trader Joe's - Whole Foods)
Coarse ground black pepper to taste
1/2 t. Garam Marsala

Gently toss ingredients with dressing prior to serving and coat everything to maximize the flavor in every bite...a great savory meal with little clean up and you won't heat the kitchen on these hot nights!
